Jonathan Gold shares his thoughts on New Zealand's food

I sat in the lobby bar of the Intercontinental Wellington nursing a negroni and waiting for Los Angeles Times food writer and columnist Jonathan Gold to join me. That morning I had read an article on Stuff by Sarah Catherall that quoted Gold as saying, "There seems to be a lot of British comfort food, circa 1968". The thought that an influencer such as Gold might take that opinion of New Zealand food and share it with his global audience played heavily on my mind.

Amisfield chef Vaughan Mabee relishes winter's end

The snow is lingering longer than Vaughan Mabee cares for. The air is frigid over Lake Hayes and Central Otago's peaks are still capped. Mabee is tiring of winter – he's looking forward to find what spring and summer will bring to his ever-changing menu. 

The hyper-seasonal food that goes into Mabee's kitchen at Amisfield, a two-hatted winery bistro located just outside of Queenstown, is limited to a relatively lean list of wild and wintry ingredients. Winter's menus have been based largely on meat and fish, alongside pickled or fermented vegetables from last season. The animals are sourced by local fishermen, hunters and divers, and the meat is often aged in Amisfield's downstairs cellar. 

While these dishes certainly have been popular, spring and summer herald totally new creations. Some ingredients will be exciting and new to the chef, others he knows will sprout where he last saw them. A lot will come from the restaurant's garden too.

Mabee is hankering for some asparagus, and he's anxious to see what the overdue season brings.

It cost $330,000 and the mortgage was about $2000 a month to service on a combined household income of about $90,000.

That same house sold last year for $595,000, according to Homes.co.nz. Someone buying it today with a 20 per cent deposit would have to pay $1271 a fortnight to service the debt.  

According to Statistics NZ, Auckland's average household income is now more than $120,000. So has it really got that much harder to buy a first home?

Gold trading scheme boss charged with 47 theft and dishonesty counts

The operator of a gold trading scheme has been charged with 28 counts of theft and 11 counts of "obtaining by deception".

The Financial Markets Authority (FMA) has filed criminal charges against Steven Robertson, the operator of PTT Limited (Prosper Through Trading), in the Auckland District Court under the Crimes Act, alleging he "misappropriated funds" deposited by clients.

Robertson was also charged with eight counts of dishonestly taking, or using a document.

Roasted vegetables
1 parsnip, scrubbed, ends trimmed, cut into quarters then sliced 1cm
¼ head cauliflower, cut into small florets and stalk roughly diced 
1 teaspoon oil, for roasting (or use spray oil)

125g cherry tomatoes
20g sunflower seeds
2 handfuls baby spinach leaves 


Lemon rosemary chicken
300g skinless, boneless chicken breast 
Zest and juice of ½ lemon
1 teaspoon finely chopped rosemary leaves

½-1 clove garlic, minced

200g Swiss brown mushrooms, thinly sliced

Denise Irvine's best places to eat in the Waikato

I had a dessert treat at Palate the other night: one of those dishes where each component is in harmony, served in perfect proportions, and it vanishes without trace. This was Palate's excellent orange panna cotta plated with liquorice ice cream, candied kumquats and mint syrup. There were sweet, creamy and citrus notes, a ball of divine liquorice ice cream, and mint syrup and fresh mint for fragrance and zippy cut-through. The attention to detail shone through in each spoonful. Palate's owner-chef Mat McLean says it's all made from scratch. The panna cotta, of course, and the ice cream; the kumquats – not often encountered in a restaurant – are from Mat's mother's trees. He preserves their golden fruit in sugar syrup. So, orange panna cotta and its lovely partners ($16) at Palate, 20 Alma St, Hamilton, are among some recommendations today from the recent rounds of local eateries.

Lunchtime sushi seaweed 'nutritionally dead'

Seaweed wraps around lunchtime sushi are "nutritionally dead", says Kiwi seaweed foraging expert Peter Langlands.

"They are so processed, they are crap," he says. He also dismisses cheap imported seaweed salad.

"That green spaghetti-like seaweed you see in pottles in the supermarket is made from the base of the wakame and it is finely shredded. They add a lot of food dyes to them and they are heavily processed with heat."

Louise Fawcett of Auckland, who set up seaweed company Pacific Harvest 17 years ago, echoes Langlands' opinion.
