I'm fascinated by the way food evolves as you move from country to country. The use of paper-thin pastry stuffed with any manner of treats, whether sweet or savoury, has its origins in Turkey. The Ottomans are thought to have invented filo for the sweet flaky joy that is baklava. What we know as filo or phyllo, and less familiarly as flia or yufka appears in all sorts of forms across Eastern Europe, around the Mediterranean and even in Northern Africa. I've had variations of this dish in Morocco, in Croatia and even in Austria.
