Black garlic is garlic that has been slowly dried in a temperature-controlled environment, which gives it a deeply caramelised and savoury flavour. Raw garlic can be pungent and strong in flavour, but here the process mellows and subdues the garlic. It can be added to sauces, vinaigrettes and soups, and is delicious smeared on bread as is or with a creamy cheese.
