Recipes: They might be fat and knobbly, but yams are yummy

Popeye famously claimed "I yam what I yam", but the vegetable version isn't quite as easy to define. What New Zealanders know as yams originate from South America, where they are known as "oca". What North Americans call yams are in fact varieties of sweet potato รข€“ which are different again to what are called yams in Africa and the Caribbean, not to mention the "yams" of Malaysia and Singapore, which are more like taro. Confused? Don't be. These recipes are for those fat, knobbly tubers (the ones that look like giant sunburnt huhu grubs) that are in season right now.
