Marieta Saunders has a shiny white dinner plate on her kitchen bench, she's surrounded by umpteen ingredients and she's artfully demonstrating her entry for this year's Matariki Dish Challenge. She starts with a swirl of pale green pea puree, adds chocolate soil, then a neat square of kumara and urenika dauphinoise (see recipe below), tops it with boldly flavoured smoked red cabbage and offers a taste of the cabbage. "We smoke it with manuka."
