When Ali Slotemaker listed a kitchen job going at her bustling cafe she thought she would be overwhelmed with interest.

It was, she said, a great job, in a growing community in one of the prettiest parts of the country. But almost six months on, the interest in the Alberta's cafe job in Mapua, near Nelson, has only been a trickle with most of the applicants being from overseas.

"In Nelson and Tasman people are always saying they can't get work but in this area we are finding the complete opposite," Slotemaker said.

So she and her assistant manager have instead resorted to getting in the kitchen themselves.

New Zealand is being urged to try offering a no-strings-attached universal basic income, to replace the existing welfare system.

Finland has this year begun a random trial of a $860-per-month universal income given to 2000 people currently on welfare.

Recipe: Beetroot and dill gravlax by Sam Mannering

The word gravlax comes from the Scandinavian word grav, which means "to bury", and lax, which is "salmon". Pre-refrigerators, Nordic fishermen would first salt and then bury the fish in sand above the high-tide mark, where it would dry out and ferment slightly. This rustic approach has fallen out of fashion, but by all means go and bury your fish at the beach รข€“ I would be hugely impressed. This is damn delicious with some horseradish cream on a bit of toasted sourdough or rye. It's also pretty good with scrambled eggs and chopped chives. Use it as you would smoked salmon.

Having children does not have to mean breaking the bank

You do not have to look hard to find stories about how expensive it is to have children. 

BNZ and Plunket estimate it costs parents of babies an average $1750 just to get nappies, wipes and a change table for their kids in their first year, and almost $9000 a year for childcare.

Inland Revenue estimates it costs even lower-income households at least a quarter of a million dollars to raise kids from infancy to adulthood.

Then there's the potential cost of a parent giving up or reducing their work hours to care for them.
