I've spent a bit of time in China over the years and, without wanting to sound too sanctimonious, one of my pet irritations is the use of the term "Chinese" food. I find it ridiculous that a country the size of Europe – with as many varied culinary traditions – can be uniformly categorised as such. It is rather like saying German food is the same as Spanish, Italian and Greek. Mercifully, it isn't.
