Recipe: Sam Mannering's smoky and sweet Jerusalem artichoke tart

I'll never forget my first experience of a Jerusalem artichoke. I must have been about 12, at a ceilidh (a Scottish knees-up) and, since I've never been good at dancing, I busied myself with eating instead รข€“ I'm still doing the same thing today. I thought the knobbly vegetables were little roast yams or something. I'll never forget the smoky shock of them. I find them strangely seductive; a sort of earthy, challenging pleasure. I feel that they need a bit of sweetness as a counterbalance; in this case, leek, bacon and gouda.
