I don't need to go on too much about the joys and relative ease of a good roast chook. This method is lovely because there is no chance of the bird drying out. Try and use as interesting a mix of mushrooms as you can find; if you're lucky enough to get your hands on some truffle, go for it. Of course, you don't need to add bread to the stuffing; you might want to use cooked puy or green lentils instead. A bit of bacon, prosciutto or speck wouldn't go amiss either. Go for a Bostock's chicken รข€“ the best by a country mile.
