What's behind big mark-ups? What we're prepared to pay

A KÄpiti Coast cafe owner says her cheese scones deserve every cent of their $5.50 price, but those of us handing over our cash can't tell if we're paying what something is worth. 

Leigh Healy, owner of High Tide Cafe north of Wellington, annoyed scone-fanciers recently when she lifted the price by $1.

More expensive dairy products, and disruption caused by construction work outside the cafe, left her no option but to increase prices, Healy said.
