The best Mother's Day breakfast-in-bed recipes from New Zealand chefs
You want to wow this mother's day with breakfast-in-bed, because she deserves it, but need to up your brunch game? For some international inspiration and homegrown Kiwi flair, four of the country's best chefs share their creations. Each recipe serves two, so you can join her - or have a second helping ready.

French toast with banana, feijoa and coconut yoghurt
1 banana
4 feijoas
½ cup coconut yoghurt
2 tablespoon coconut sugar
4 slices of brioche
2 eggs
4 tablespoon milk
½ teaspoon vanilla essence
½ teaspoon ground cinnamon
2 tablespoon honey
2 tablespoon butter, to fry
icing sugar, to dust
pinch salt
Combine 1 tablespoon coconut sugar with yoghurt and set aside. Whisk together eggs, milk, vanilla, remaining coconut sugar, salt, and cinnamon. Soak bread in the egg mixture then pan fry in butter over medium heat until golden on each side. Serve warm, topped with coconut yoghurt, sliced banana, scooped out feijoa, a drizzle of honey, and dust with icing sugar. Cup of tea optional.
If you have a blow torch, sprinkle the banana with sugar and burn like a brulee. Garnish with edible flowers, if available.
