I'm often asked what I eat for breakfast. Usually it's nothing much more than about 15 triple-shot flat whites. Classic chef. I guess it's probably because we spend most mornings cooking for other people. In any case, I'm not really into anything too heavy before midday, so when I do eat breakfast, I'll find myself making something like this; more of an assemblage than recipe; simple, fresh, straightforward and also light enough to avoid any post-brunch food coma.
