Manāki: New Zealand's first sustainably produced whitebait

For a food often lauded as a Kiwi icon, not much is known about whitebait here. As we munch happily on a whitebait fritter or three, how many of us realise four of the five whitebait species are threatened? Whitebait, you see, are the juvenile form of the native freshwater fish inangi, kÅaro, banded kÅkopu, giant kÅkopu and shortjaw kÅkopu, and all but the banded kÅkopu are declining.
