Recipe: Baked herb-crusted salmon with zucchini & cherry tomatoes

Ingredients:
1 tablespoon olive oil
6 zucchini, sliced into rounds
250g punnet cherry tomatoes
¼ cup white wine
¼ cup chopped pitted green olives
1 tablespoon finely chopped rosemary
½ cup finely chopped flat-leafed parsley
grated zest of 1 lemon
4 x 100g-150g salmon fillets
green salad and crusty bread to serve
